I don't monitor honor closely enough to have a firm grasp of the matter, but intuitively, I think the answer can be summed up as follow:

If the honor gains from attacks are in part tied to how much land is grabbed, then GSes will protect your honor that way (since it reduces gains), but otherwise it most likely won't.

This is completely contingent on the nw distribution of the KD chaining you.

Your statement holds true only if the KD doing the chaining has a mostly even nw distribution.

With a linear nw distribution having a non-zero slope, we chained some people without GSes down to 400 acres or less (from 2000+).

After such a beating, the tendency toward peasantry is high and knighthood is a lofty hope to have indeed.

Also, if you have no GSes and are successfully chained to a ridiculously low size, you have to release troops/thieves by the bucketload and are a lot easier to farm afterwards once you regain acreage.
