Do you guys play a different war building strat than regular strat? If so, about percentage of your acreage do you convert? (For example - "I change 10% of x into y and 5% m into n, for a total of 15% acres converted" - the actual what to what is not important to me - just the total %)
What are reasonable and unreasonable numbers for the total percentage of acres converted?
40 to 80% depending on the situation!

it depends how long you are planning to be OOW. if its only something like 4 days its often rediculous to spend that much money razing/building.
the amount of GC you will save from your armouries or schools often is negated by the GC you spent razing/building.
A wizard pump is a different story...
