Wasn't an issue when undead were 15/1 and needed 0 food, hardly an issue with 12/2 needing 2% farms

But back then they couldn't train those elites. They had to convert them and didn't have stronger horses/pris.

Beware of dryad training speed plus war spoils out of war with cool rituals. When I soloed in 63 my human war hero had the training speed bonus, and fortifying my shiny new acres on retaliation made my defenses harder to break upon my enemies return army.

Time is money in Utopia which is why I always have 3 dwarves in The Virtual Kingdom.
