Gains are based on networth now. It depends on the kingdom but most people try to aim for the following
Non-Gnome
600 acres
3800 offensive specs
1200 defensive specs
600 thieves
Try to get some elites if you are elf mixed with the offense specs
Gnome
600 acres
3500 elites
1200 defensive specs
900 thieves
Plunders OOP

BTW to answer your question aprox 600 acres OOP is good.
Often we measure 2:1 off spec to def spec ratio instead of DPA, that's how my kd decides on DPA..
In the long run with the current changes 35 to 40 DPA with troops out, the goal is to prevent getting double tap thats all:)

oop is more about absolute numbers than dpa. Figure what a 500 acre could produce in offense and no defense. Have greater than that.
Really, it depends on what your kd is doing. If you want to come out attacking, many do not explore at all. They do plunders to ramp up elites and science on the assumption that the smaller pumped province is better than the large unpumped one even at similar net worth.
Best advice to give you. Do NOT come oop without some offense. The small suiciders will eat you alive unless you get large and have a great deal of net worth. Even then, many will catch up to you before you can get the dpa later on in the game.
Pure explorers in protection and early age do not fare very well at all.

Pure Mage. only enough thieves to keep out pests
was thinking 450, 500, 525 or even 550 acres.
i threw together a 500 acres strat but was thinking that 450 is a better choice.
Now im reconcidering to 550. but i don't plan on attacking at all.
Pure anything does not work anymore. It is all about hybrids, A/T and A/M.

25 Hybrids
25 * 2 = 50 attacks per day in war
If you are running warrior/rax strat then
25 * 3 = 75 attacks per day in war.
This is not counting the double taps that can be done with proper coordination.
Now you have A/M and A/T
The A/M can do all the strong mage ops while A/T all the weak and intel ops.
The A/T can do all the strong thief ops while A/M all the weak and intel ops.
Pure attackers can get taken down with ops. T/Ms cannot attack.
Pure mages and thieves are obsolete as A/T and A/M can do good enough op damage and still attack.
Basically 25 provinces attack and burn all their stealth and mana in the most efficient way possible in the game right now.

Orcs can be run as pure attackers but people still be trying to run them as A/T to get more out of them.
In general almost the majority of all races run hybrids.
Orc is one of the weakest races currently.

That's an average of 78 soldiers per hour drafted you should be able to do much better than that. Especially with some of the races and Patriotism cast. My first hour of drafting will provide 62 soldiers and my first hour will net me about 350 peasants so hour 2 will net me 66 soldiers by the time my buildings come in I should be drafting 100+ soldiers per hour before pat.
Also yes make sure you have atleast 1 tpa raw at OOP that will save you so much during the first week of the age when everyone is looking for free resources.
offensive modifiers > defensive ones, therefor many consider that TMs are completely redundant, though they have started to creep back into skds a bit.
for oop its best to come out offense heavy and try for x4 hits - 3 land and a plunder is nice.
1 tpa, 1 d spec an acre, rest offense. 600 is a nice acreage to come out at, but as usual it depends on what the rest of teh kingdom does.

having <10k defense, and no offense on >800 acres means you will get hit!
thats a basic rule =)
15k off + 5-10k def on 6-700 acres is pretty managable for OOP
